About the Recipe
Before we get into traditional holiday dishes, how about something new and different? Doro W’et is a dish I immediately loved despite it’s somewhat unusual ingredient combo. It’s a stew that starts with an onion and garlic foundation but then adds in ginger, tomato sauce–and peanut butter! What makes it really unique, however, is Berbere, the distinctive spice mixture commonly used in Ethiopia.
Plant-Based/Vegan/Vegetarian Version Doro We’t can be made with tempeh, too. It’s an easy substitution and I’ll show you a little trick I learned to boost its flavor.
IMPORTANT NOTE Be sure to read the instructions below about getting the special Berbere spice that’s needed for this dish.

How Does a Cook-Together Work?
As soon as you register
- I’ll email a Shopping List so you’ll have plenty of lead time to get to the store–and you’ll want to follow the instructions below to order your berbere right away (in case you can’t find it at your usual store.)
- Need modifications for health/taste needs? Let me know asap and I’ll brainstorm with you. Know that the recipe is already gluten- and dairy-free and a plant-based option is included.
The day before we cook
- I’ll email the recipe.
- I’ll also email a Mise en Place List that tells how to set up your kitchen for class, i.e., what equipment and ingredients to have ready so your cooking goes smoothly.
- Finally, I’ll send the Zoom link. If you’re new to Zoom, test it out and let me know if you need set up instructions.
On cooking day
- I’ll send a couple reminders the day of class, along with the Zoom link again.
- At class time, you’ll log onto Zoom and we’ll make the recipe together—me in my kitchen, you in yours. I’ll instruct at “cooking speed,” so you can follow along with me.
- If you have questions as you cook, you can ask and get help.
- When class is done, your dinner is done, too!
- I’ll stay on after class for further Q & A for anyone who wants.
After class–the recording
- Did you miss class? Want to watch again? Class will be recorded and you can watch anytime.

IMPORTANT ADVANCE PREPARATION NOTE ON GETTING BERBERE
Order/Buy Your Berbere in Advance I hope you’ll come experiment with me, but be sure to get the berbere in advance. It is becoming common enough that you may find it at your grocery store. But if you can, order some from Savory Spice Shop because I use and know their blend. (Like most spice blends, they can vary depending on the source.)
You can order from the main Savory Spice website and get 10% off your first online order (although they are running a little behind on shipping right now.) Below is the info for the Boulder store. I called and they will take your order by phone or email and ship to you right away. Or you can pick up at the store.

Other Spices? Ground Ginger? A Good Salt? As long as you’re ordering Berbere, can I suggest you think about stocking up on any other spices you need. The recipe also calls for ground ginger powder, so include that if you don’t already have. And if you don’t have a good, everyday salt, talk to them about a recommendation.
Quantities As with any new spice, always get the smallest amount to start with. Berbere is also spicy, another reason you don’t need much (and you’ll be able to add only as much—or little—as you want in the recipe.)
What If I Don’t Get the Berbere? We’ll substitute cayenne pepper for the berbere, but I have not tried this. I hope you’ll order the real stuff because I love introducing everyone to new flavors. But if that’s not possible, still come. That’s what’s most important—we’ll figure out something to make the dish work for you.
Other Unique Ingredients? Nope–only the berbere. Everything else can be found at your regular grocery store—if it’s not already in your cupboards.

Yes I will absolutely make that dish again! And you are right, parts of it could be used in other ways. I loved the delicate flavors of the white bean sauce and the mushroom stuffing was decadent!! I was most nervous about those crepes since I had never made them before, and they were dead easy 🙂
I was happy to try a more complicated dish . . . it was a challenge but gave me a feeling of accomplishment to be able to do it! I look forward to the next class.
