Recipe: Pistou Redux with Fresh Dill

May 15, 2024 | 7-Recipes--Healthy and Tasty, Blog Posts

What do good cooks do that struggling cooks don’t?

Ever wonder why some people are able to make healthy and tasty meals no sweat? Here’s one reason: They use the same recipes over and over!

Does that sound crazy? Terribly boring?

It’s actually not crazy or boring at all, because good cooks don’t use the same recipe, exactly the same, over and over. Instead, they take one basic recipe and swap out ingredients for endless variety.

And because they are following the same outline over and over, it’s fast and easy, i.e., it makes tasty and healthy meals totally doable on an everyday basis.

Give it a try with this Fresh Dill Pistou.

Pistou Redux:  Fresh Dill Pistou

Remember the recipe for Fresh Herb Pistou? It’s pretty easy to remember: A few pecans, a little oil, about a cup or so of fresh herbs, plus salt and pepper. To assemble, chop the nuts first then add everything else and process.

So it was pretty easily to use up the rest of my fresh dill by simply swapping out:

  1. Dill for the fresh herb combo (and I did include the stems this time because they are very tender;) and
  2. Pistachios for pecans (because why not vary things a bit?)

I used the pistou to top both cooked carrots (or sauteed zucchini, or roasted cauliflower, steamed asparagus, etc.) and a chicken breast. Did you notice the color in the photo above!

Prefer an Even Easier Option?

Just sprinkle dill over white fish or chicken breasts and you’ll still get plenty of spring flavor. Options: Saute some green onions with the fish or chicken and put them on top. Add lemon. Saute in butter.
